Who doesn't love some breakfast for dinner? How about if that breakfast for dinner is only 5 Freestyle SmartPoints for Weight Watchers? I love Weight Watchers recipes that are filling and low in points! This Weight Watchers Easy Breakfast Casserole is really good and low in points too. It helped satisfy my potato craving too without a ton of points.
Ingredients Needed for Easy Breakfast Casserole
10 oz can of Diced Tomatoes & Green Chilies
20 oz Simply Potatoes Shredded Hash Browns
1cup Bisquick Pancake and Baking Mix, Heart Smart
1 egg
2 cups low-fat milk
1 cup 100% liquid egg whites
16 ounces diced ham
1 cup shredded cheese made with 2% milk
How to Make Easy Breakfast Casserole
Preheat the oven to 400 degrees F.
Spray a 9×13 pan with nonstick cooking spray.
Spread fresh or thawed hash browns in pan and sprinkle with salt and pepper to your liking.
In a bowl combine ham and the drained can of diced tomatoes and green chilies. Mix this in with the hash browns in pan.
Sprinkle the cheese over this ham, tomato and hash brown mixture.
In the empty bowl combine milk, Bisquick, egg and egg white liquid and whisk together.
Pour this liquid over the top of the hash brown mixture.
Bake, uncovered for 40 minutes or until knife inserted in the center comes out clean.
Breakfast Can Be Anytime
I actually made this one night for dinner and then had the leftovers for breakfast later in the week. It warmed up nicely in the microwave. My family all liked this easy breakfast casserole. It is also very easy to modify for your family's tastes!
Easy Way to Divide Your Casserole
So I found an AMAZING product that helps with portion control on casseroles, desserts, etc. The pan has a grid on it and comes with a special tool to cut your food into exact portions. YES!

Weight Watchers Freestyle SmartPoints Per Serving
I added up the points for all the ingredients listed above and divided that by 12. The casserole was cut into 12 portions. I think 5 points for a nice sized piece of casserole is pretty good!! This is 5 FreeStyle SmartPoints per serving!

I am glad to hear you are doing well on WW! I just got back from vacation and was dreading the scales….but I didn’t gain so I am pumped about that!! I love how versatile this recipe is…you can really change it up and make it your own!
Any ideas for something other than the can of tomatoes?! This sounds good for my parents but my mom hates tomatoes
I think you could use any veggie she likes. You could do a can of corn, but it would add some points. You could cut up bell peppers, onions…really almost anything would work!

Thanks for the 10 ways to fail on WW. It’s perfect and so true. This breakfast casserole sounds awesome. I want to make it for dinner this week. Just curious, Did you calculate this on the Recipe Builder? My WW leader recommends we do it that way. If you did then I’m soooo excited to try it. She said the recipe builder changes the points.

Any thoughts on a milk substitute? I’m lactose intolerant. But soy or almond don’t sound right for this.
I have not tried it myself, but I have seen recipes that used original almond milk…I think it would probably work fine! Let me know if you try it and how it turns out.
