This Weight Watchers Easy Breakfast Casserole is really good, and who doesn't love some breakfast for dinner?  I love Weight Watchers recipes that are filling and low in points!

BREAKFAST ANYTIME

I have always loved eating breakfast anytime for any meal. There is one kiddo in our house who doesn't like having breakfast for dinner, but she is forced to sometimes, LOL.

When you are getting bored with your meal plan on Weight Watchers, try switching it up and having breakfast for dinner. Many great breakfast recipes take too long to make in the morning before work.

I actually made this one night for dinner and then had the leftovers for breakfast later in the week.  It warmed up nicely in the microwave.  My family all liked this easy breakfast casserole.  It is also very easy to modify for your family's tastes!

INGREDIENTS FOR WW EASY BREAKFAST CASSEROLE

This recipe doesn't have a ton of ingredients, and they should be easy to find at the store. I always have a lot of these basics on hand!

HOW TO MAKE AN EASY BREAKFAST CASSEROLE

I try to keep things simple in the kitchen. This Weight Watchers Easy Breakfast Casserole doesn't have a lot of difficult steps and doesn't dirty up many dishes either. Time is valuable!!

STEP ONE: PREPARE THE PAN

Start off by preheating the oven to 400 degrees F.

Spray a 9×13 pan with nonstick cooking spray.

STEP TWO: ADD HASH BROWNS

Spread fresh or thawed hash browns in the bottom of the pan and sprinkle with salt and pepper to your liking.

STEP THREE: ADD HAM & ROTEL

In a bowl, combine the ham and the drained can of diced tomatoes and green chilies. Mix this in with the hash browns in the pan.

STEP FOUR: ADD CHEESE

Sprinkle the cheese over this ham, tomato, and hash brown mixture.

STEP FIVE: MAKE EGG MIXTURE

In the empty bowl (I use the same bowl that I used for the ham), combine milk, Bisquick, egg, and egg white liquid and whisk together.

Pour this liquid over the top of the hash brown mixture.

STEP SIX: BAKE

Bake, uncovered for 40 minutes or until the knife inserted in the center comes out clean.how to make Weight Watchers Easy Breakfast Casserole

HOW TO GET EQUAL PORTIONS OF CASSEROLES

So I found an AMAZING product that helps with portion control on casseroles, desserts, etc. The pan has a grid on it and comes with a special tool to cut your food into exact portions. YES!

I added up the points for all the ingredients listed above and divided that by 12.  The casserole was cut into 12 portions.

I think 5 points for a nice-sized piece of casserole is pretty good!!  This is five myWW Points per serving for Green, Blue, and Purple plans.

On the current WeightWatchers Program (2023) it is 5 points per serving.

Ingredients
  • 10 oz  Diced Tomatoes & Green Chilies canned
  • 20 oz  Simply Potatoes Shredded Hash Browns
  • 1 cup  Bisquick Pancake and Baking Mix Heart Smart
  • 1 egg
  • cups  low-fat milk
  • cup  100% liquid egg whites
  • 16 ounces diced ham
  • cup shredded cheese made with 2% milk
Instructions
  1. Preheat the oven to 400 degrees F.

    1. I am glad to hear you are doing well on WW! I just got back from vacation and was dreading the scales….but I didn’t gain so I am pumped about that!! I love how versatile this recipe is…you can really change it up and make it your own!

  2. Any ideas for something other than the can of tomatoes?! This sounds good for my parents but my mom hates tomatoes

    1. I think you could use any veggie she likes. You could do a can of corn, but it would add some points. You could cut up bell peppers, onions…really almost anything would work!

  3. Thanks for the 10 ways to fail on WW. It’s perfect and so true. This breakfast casserole sounds awesome. I want to make it for dinner this week. Just curious, Did you calculate this on the Recipe Builder? My WW leader recommends we do it that way. If you did then I’m soooo excited to try it. She said the recipe builder changes the points.

    1. I have not tried it myself, but I have seen recipes that used original almond milk…I think it would probably work fine! Let me know if you try it and how it turns out.

    1. Entering the nutritional value isn’t going to be accurate. It doesn’t take into account zero point foods. You have to enter each ingredient into the recipe maker. That is how the recipe points are figured.
