WHAT IS A FRITTATA?
If you are not familiar with frittatas, don't be scared to make one. Frittatas are simply an Italian egg-based dish similar to omelets or crustless Quiche.
The great thing about frittatas is that you can add many interesting ingredients and make a whole meal in a pan. This is a good way to get more veggies into your diet.
Frittatas are a great change if you are sick of eating plain eggs.
INGREDIENTS FOR A WW SHRIMP FRITTATA
This WW Shrimp Frittata has some basic ingredients that are very low in points. The fat-free ricotta keeps this recipe low!
- Can Tiny Shrimp
- Red Bell Pepper
- Green Bell Pepper
- Garlic
- Eggs
- Fat-free Ricotta Cheese
- Parsley
- Salt & Pepper
- Nonstick Olive Oil Cooking Spray

HOW TO MAKE A WEIGHT WATCHERS SHRIMP FRITTATA
I love that this is a quick and easy recipe. It is perfect for busy weeknight dinners.
STEP ONE: VEGGIES
Start off by chopping the bell peppers into very small pieces. Mince the cloves of garlic.
Heat an 8-inch nonstick pan or cast-iron skillet
over medium heat. Spray the pan lightly with nonstick olive oil spray.
Saute the peppers and garlic until they are softened.
STEP TWO: ADD SHRIMP
Take the can of tiny shrimp and drain off all the excess liquid. Add the shrimp to the skillet with some salt and pepper to taste.
Cook for another minute or so.

STEP THREE: ADD EGGS
In a small bowl, whisk the eggs and a pinch of salt and pepper.
Add the whisked eggs to the skillet spreading them evenly in the pan.
STEP FOUR: ADD RICOTTA
Now add the ricotta cheese to the skillet by dropping teaspoons of ricotta on top of the eggs throughout the pan.
STEP FIVE: COOK
Go ahead and lower the heat to low. Cover the pan and let the mixture cook for about 10 minutes or until the eggs are set up.
STEP SIX: SERVE
Let the frittata cool for a few minutes after it is done cooking. Once a little bit cool, run a spatula under the edges to loosen the pan.
Cut it into four equal pieces and serve warm. This is great with some fresh parsley and a dash of hot sauce!

You won't believe how filling this frittata is, especially since it is zero points! Great for those days when you are low on points at dinner time.

WEIGHT WATCHERS SHRIMP FRITTATA RECI

This Weight Watchers Shrimp Frittata recipe is perfect for breakfast or dinner and is low in myWW points.
- 6 oz can of tiny shrimps drained
- ¼ cup chopped red bell pepper
- ¼ cup chopped green bell pepper
- 2 cloves garlic minced
- 3 large eggs
- Salt and pepper to taste
- ¼ cup fat free ricotta cheese
- 1 teaspoon chopped parsley to garnish
- Nonstick Olive Oil spray

Heat an 8 inch cast iron or nonstick pan, over medium high heat. Spray it lightly with oil spray and sauté both the peppers and garlic until soft.

Add the drained shrimp and salt and pepper and cook for another minute.

Crack the 3 eggs in a bowl and lightly season with salt and pepper. Whisk it well and add it to the shrimp and pepper mix, spreading it evenly.

Add tiny dots of ricotta cheese, about 1 teaspoon per dot, on top of the eggs.

Lower the heat to low and cover the pan and let it cook for10 minutes or till the eggs have set ton top.

Let it cool for couple of minutes and then run a spatula around the pan to loosen it. Cut into 4 wedges and serve immediately with a sprinkle of fresh parsley and dash of hot sauce.
Divide the frittata into 4 equal sections. Each section is one serving.
Each serving is ZERO points for the blue and purple plans. There are 2 points for the green plan.
On the current WeightWatchers Program (2023) it is 0 points per serving.
