INGREDIENTS FOR WW BREAKFAST TAQUITOS
This recipe takes minimal ingredients and you may have a lot of it already on hand! I love recipes that don't require a special trip to the store.
- Corn Tortillas
- Eggs
- Red Bell Pepper
- Spinach
- Green Onion
- Jalapeno

HOW TO MAKE WEIGHT WATCHERS BAKED BREAKFAST TAQUITOS
This is a recipe you can double or triple and keep in the fridge all week long for a quick breakfast for the whole family! Taking these as a snack is also a good idea.
STEP ONE: SCRAMBLE THE EGGS
First, preheat the oven to 425 degrees F.
Next, grab a baking dish and spray it with nonstick spray
. Then set it aside.
Go ahead and scramble your eggs if you haven't already done that.
STEP TWO: MAKE FILLING
Microwave the corn tortillas for 1 minute to soften them up.
Mix together the scrambled eggs and remaining ingredients to make the filling.
STEP THREE: FILL TORTILLAS
Spoon about a tablespoon of filling mixture onto the bottom edge of a heated corn tortilla.
Wrap the corn tortilla tightly upward around the filling.
Place the seam side down onto the prepared baking dish. Keep up this process with the remaining corn tortillas and filling until you get all the tortillas filled and rolled.
STEP FOUR: BAKE
Bake until taquitos are crisp. This usually takes about 12-15 minutes. Serve hot!
These are great served with salsa…which is zero points!

EASY RECIPE MODIFICATIONS
There are lots of easy modifications for these breakfast taquitos. I personally will leave out the onion and add more spinach or pepper. Using the diced jalapenos is a must for me because I like them spicy.
Be careful about adding cheese, sour cream, etc., because they will increase each taquito's points.

BAKED BREAKFAST TAQUITO SMARTPOINTS
It is important to grab the 6-inch corn tortillas…because the 8-inch is higher in points.
It is 2 Points per taquito on all 3 myWW plans. That isn't bad at all!! Dip this in some zero-points salsa; it is a great snack too.
On the current Weight Watchers Program (2023), it is 1 point per taquito. The serving size is one taquitos!

Weight Watchers Baked Breakfast Taquitos are great for any meal or even as an appetizer. These are low in points!
- 10 6-inch corn tortillas
- 3 large eggs scrambled
- 1 medium red bell pepper finely chopped
- 1/2 cup fresh spinach chopped
- 1 green onion sliced thin
- 1-2 Tbsp jalapeno minced, optional
- nonstick cooking spray

Preheat the oven to 425°F. Spray a baking dish with nonstick cooking spray and set aside.

In a medium skillet, scramble the 2 eggs.

Add the bell pepper, spinach, green onion and jalapeno to the skillet of scrambled eggs and stir to combine.

Microwave the corn tortillas for 30 seconds to 1 minute to soften the tortillas.

Spoon about 1 tablespoon of egg mixture onto the bottom edge of a warm corn tortilla. Wrap the tortilla tightly upward arond the filling.

Place seam side down on the prepared baking dish. Repeat with remaining tortillas.

Spray the tops lightly with nonstick cooking spray for a crisper taste. Bake the taquitos for about 12-15 minutes or until lightly brown and crisp.
Serving size is 1 taquito.

You are right Sue…if you use the thin tortillas they would be 1 point each…in recipe builder I just used a regular corn tortilla that is 2 points to be on the safe side since not everyone will get the extra thin ones!

I think so..not quite as good as fresh though!
Do these freeze well?
I haven’t tried freezing them…they never last long enough, LOL. If you try it let us know how it goes!

My tortillas always fall apart when I make these. Any hints on keeping them together?
Corn tortillas are so finicky!! Make sure they are warm and fresh. I have found if I have had the tortillas in my pantry very long they will crumble easier.
