Mini Patriotic Cupcakes are such an easy dessert to make…yet it looks like you slaved away in the kitchen! I love that these cupcakes would work for either Memorial day picnics or for the 4th of July!
I like to take as many shortcuts in the kitchen as I can….I have a lot going on and don't have the time to spend by making everything from scratch. When I found a Pillsbury cake mix that was blue…Blue Raspberry to be exact…I knew it would make a great cupcake!
If you can't find a cake mix that is blue….you can always just add some food coloring to your white or yellow cake mix until you get a nice blue color! 🙂
How to Make Mini Patriotic Cupcakes
I made my mini cupcakes according to the package directions. My mix didn't give specific baking times for the mini cupcake pan…but I just kept an eye on them and it took about 13 minutes for them to bake in my oven.
I let the cupcakes cool and I mixed up some cream cheese frosting. You may already have a cream cheese frosting recipe and if so…use it! I used the recipe from Martha Stewart and it was fabulous! It only calls for 4 ingredients and it is easy and no fail! If you don't want to make your own frosting you can always just buy a container of cream cheese frosting…I won't tell! 🙂
The frosting recipe is: 8 ounces of softened cream cheese, 1 stick unsalted softened butter, 1 cup powdered sugar and 1 teaspoon vanilla extract. Put cream cheese into your mixing bowl and start beating, gradually adding the stick of butter in, beating until smooth. Now slowly add in your sugar while continuing still mixing. Last add your vanilla in and make sure mixture is blended until nice and smooth!
I frosted the cookies using a basic frosting tip stuck into the corner of a baggie! I just used a spatula to spoon some frosting into the baggie and piped the frosting onto the mini cupcakes.
Last I sliced up some strawberries and put a small slice on each cupcake and topped it with some blue sprinkles!
Get Your Kids Involved Making Mini Patriotic Cupcakes
This was a great dessert to get my kids involved! One of my daughters and her cousin helped me by cutting the strawberries up. They helped frost the cupcakes and of course had fun putting LOTS of sprinkles on! The more involved your kids can get in the kitchen…the better off they will be when they are on their own!
I thought these Mini Patriotic Cupcakes turned out so cute. They were DELICIOUS to eat…the blue raspberry flavored cupcake with the cream cheese frosting and a strawberry on top…you can't go wrong serving these up at your next Patriotic holiday celebration!
