You can never have too many recipes for the grill. I also think eating kebobs is just plain fun. These grilled Pineapple Chicken Kebobs have a delicious Polynesian Sauce that will really spice up your dinner! This is a great way to use up extra chicken breasts!
Pineapple Chicken Kebobs
Fruit that is grilled ends up tasting so amazing..it kind of carmalizes into a delicious piece of yum! Add some chicken and sauce and it is a big time winner.
Another great thing about grilling is that you can get your kids outside while you cook. I admit I am not the grill meister in my house, but I can sit and read on the deck while my hubby cooks!
I have a little confession to make. Fresh pineapple is new to me. I have eaten it while on beach vacations, but in Kansas it is hard to get a good fresh pineapple, LOL. There are no tips from me on how to cut a fresh pineapple…maybe you can give me some tips.
How to Make Pineapple Chicken Kebobs
Grab a saucepan and add a cup of pineapple juice

Now pour the water, ketchup and apple cider vinegar
into the pan and stir to combine. Don't worry…this won't taste like apple cider vinegar, LOL.
Now get ready to wisk in the cornstarch
, soy sauce
and brown sugar
. Make sure it is well combined and SMOOTH.
Put this mixture on the stove on medium heat. Allow the sauce to thicken but make sure to stir it often so it doesn't burn on the bottom.
When the sauce is thickened remove the pan from the stove and let it cool down.
While the sauce is cooking or cooling you can cut the chicken thighs into chunks. It works best to have chunks that are 2-3 inches in size.
Go ahead and chop the onion and bell pepper into slices that will fit nicely on a skewer without falling right off.
If you use wooden skewers be sure to soak them in water first. This is a step that I can't seem to remember….so I bought some stainless steel skewers
that are always ready to go.
Start layering the onion, bell pepper, chicken and pineapple chunks on to the skewers.
Grill the skewers over medium heat until the chicken is done in the center.
Use a baster to brush the Polynesian sauce on both sides of the skewers.
Continue grilling with the sauce on, turning the skewers so that all the sides are evenly done.
The cooking time will definitely vary grill to grill and based on how “well-done” you like your chicken!
