Tortellini Spinach Soup is a comforting, wholesome dish that's perfect for any season. This recipe is perfect for Weight Watchers because it only calls for a slow cooker to be used to cook a fragrant infusion of herbs and spices, soft tortellini, and fresh spinach for a satisfying, hands-off dinner.

CAN I USE FROZEN SPINACH IN THIS SOUP?
It would be better to use fresh spinach leaves for this recipe. Using frozen spinach will make the texture too watery. In addition to that, fresh spinach can improve the soup's entire taste and creaminess. This is because of its soft texture and more lively, slightly sweet flavor.
Its improved ability to maintain its shape creates a pleasing textural contrast with the tender tortellini. While spinach is beneficial whether it is fresh or frozen, fresh leaves may have somewhat higher concentrations of key vitamins and nutrients like vitamin C that can be lost while freezing.
TIPS FOR USING FAT-FREE CREAM CHEESE
One excellent technique to cut calories and fat while maintaining a creamy texture in dishes is to use fat-free cream cheese. The following suggestions will help you make use of fat-free cream cheese:
1. Soften
Standard cream cheese may be softer than fat-free cream cheese. Allow it come to room temperature for approximately half an hour before using to simplify combining. Another option would be to microwave it for just a few minutes, but watch out not to overheat it.
2. Blend Thoroughly
It may be more challenging to get a smooth consistency with fat-free cream cheese due to its distinct texture and decreased fat level. For a smoother texture, use a food processor, blender, or hand mixer.
3. Add Gradually
Fat-free cream cheese should be added to hot dishes gradually while stirred constantly so that there is a smooth incorporation. This guarantees an equal spread throughout the dish and lessens the chance of clumping.
4. Use Fresh Cream Cheese
Fat-free cream cheese spoils easily, just like any other dairy product. For the greatest taste and consistency, it is important that you always verify the expiry date and use it fresh.

STEP ONE: PREPARE INGREDIENTS
Grab all the ingredients needed to make this recipe as well as your slow cooker. This is a super easy dish, the first thing we need to do is throw everything in the pot. But do not put in the tortellini just yet. We are going to set that aside for later. Also, do not forget to slice your cream cheese into cubes before tossing it in with the rest of the ingredients.

STEP TWO: START COOKING
Once all of that is done and ready, go ahead and set the slow cooker temperature to low. You are going to cook this for about 4 hours. Be sure to time this so you can check on it after 4 hours of cooking the soup recipe.
STEP THREE: ADD IN THE TORTELLINI
After that cooking time is up, add your frozen tortellini into the soup mixture. Stir this to combine with the other ingredients and continue cooking for another hour or until the tortellini is cooked. Still keeping the cooking temperature to low.

STEP FOUR: SERVE
That's it! Grab your bowls and start digging in, enjoy!
WEIGHT WATCHERS POINTS
I took the time to calculate this recipe and portion out cup-sized portions. I was able to get at least 10 cups of soup from the pot!
It is 5 points per cup on all 3 myWW plans.
On the current Weight Watchers Program (2023), it is 6 points per serving.
The spinach and tomatoes are zero points, and using fat-free cream cheese lowered the points too. The flavor was still wonderful, and it was a filling meal!

I guess I don’t understand smartpoints and freestyle smartpoints. I thought both points were calculated the same way. The only exception being the zero point foods. So why did the point value go up?
Definitely trying this one too Jamie…as always I appreciate your effort and sharing of all the WW recipes! Thank you and have a great weekend!
