HOW TO MAKE SLOW COOKER CAJUN BRAISED CHICKEN
Now that you have gathered all of your ingredients, it is time to make this yummy recipe. Follow the instructions below for the best results!

STEP ONE: PREP THE BACON
Grab your bacon and a frying pan. The first thing you have to do is saute the bacon. Cook them until they are crispy. Then, you will chop up the bacon strips and set them aside.

STEP TWO: SEASON THE CHICKEN BREAST
Gather all the seasoning and spices needed for this recipe and your chicken. Throw them in a mixing bowl and blend all those spices with the chicken. Make sure that all the pieces are well coated.

STEP THREE: PREPARE THE BELL PEPPER
This step is optional but I recommend you to try it! Doing this will improve the flavor of the dish. Slice the peppers into two. Place the halves on a baking pan and broil for about 5 to 8 minutes to char them. After that transfer to a bowl and tightly cover with aluminum foil.
Let it steam inside the bowl and allow it to cool there. Once they are ready, you can either remove the skin or leave it on. Dice the peppers and set aside.

STEP FOUR: COMBINE INGREDIENTS AND COOK
Toss the diced peppers, onion, and carrot in the bottom of your slow cooker and add the chicken broth. Add the seasoned chicken on top of those and add the rest of the ingredients—diced tomatoes, bacon, and tobasco sauce. Set the slow cooker on high and cook for about 4 to 5 hours.

STEP FIVE: COOK SIDE
Prepare your choice of side with this dish. It could be rice or mashed potatoes, but for this recipe, we are preparing cauliflower rice. To do this, break the cauliflower into pieces and grate them. A head of cauliflower makes about 3 to 5 cups of cauliflower rice.
Place the riced cauliflower in a microwave-safe bowl with a lid and add the water. Microwave the cauliflower for 6 to 8 minutes on high or until it is tender enough.

STEP SIX: SERVE DISH
Once everything is done and ready, you can serve this recipe! Start with a plate of cauliflower rice and top it with the cajun-braised chicken.

- 4 chicken breasts boneless, skinless, coarsely diced
- 3 strips bacon crisped and coarsely chopped
- 2 tsp paprika
- 1 1/2 tsp garlic powder
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 1/2 tsp white ground pepper
- 1 1/2 cups chicken broth
- 1/2 cup green bell pepper coarsely diced
- 1/2 cup red bell pepper coarsely diced
- 1/2 cup red onion coarsely diced
- 1 medium carrot thinly sliced
- 14.5 ounce diced tomatoes
- 1 tbsp Tabasco sauce
- 1 head fresh cauliflower
- 1/4 cup water

Saute your bacon in a frypan until crisp, then chop and set it aside.

Mix the dry spices listed and season the diced chicken breasts. I use a small mixing bowl and stir the chicken pieces until they are well coated.

To improve the digestibility of this dish and add to its flavor, place the halves of your peppers on a cookie sheet and place them under the broiler for 5 to 8 minutes to char them. Drop the charred peppers into a mixing bowl and cover the bowl tightly with aluminum foil. Let the peppers steam for 5 to 8 minutes while they cool and then bring them out on a cutting board where you can use paper towels or your fingers to remove the outer skin.

If pepper skins don’t bother you or diners, you can skip these steps and just coarsely dice the peppers and add them to the dish.

Place the diced peppers, onion, and carrot on the bottom of your favorite slow-cooker and add the chicken broth.

Now, place your seasoned chicken on top of the vegetables.

Finally, pour the can of diced tomatoes over the chicken and sprinkle the bacon on top. Sprinkle the tobasco sauce over everything.

Break the cauliflower in to pieces you can hold, and grate them. A head of cauliflower makes about 3 to 5 cups of cauli-rice. Place the riced cauliflower in a microwave safe bowl with a lid and add the water. Microwave the cauli-rice for 6 to 8 minutes on high, or until it is tender enough for you. That's it! Super easy!!
