WHAT KIND OF MEAT SHOULD I USE?

This Weight Watchers Beef Enchilada Casserole contains ground beef. To keep the calories and fat content lower, I like to use very lean ground beef.

Some benefits of using lean ground beef are the vitamins and minerals found in it. Iron and zinc are two of the main ones that add to a healthy diet.

TIPS FOR THE PERECT WW BEEF ENCHILADA CASSEROLE

A great tip would be to use a homemade enchilada sauce. I have a delicious recipe for a WW enchilada sauce. It only has 5 ingredients and not only is it low in points, but it’s also very versatile.

Another tip I would give is to make sure you use corn tortillas instead of flour. Flour tortillas will get soggy while cooking and will increase the calories.

INGREDIENTS

This hearty casserole has many ingredients you will already have on hand. With less than 10 ingredients, this recipe is easy and fast to make!

HOW TO MAKE WEIGHT WATCHERS BEEF ENCHILADA CASSEROLE

A huge plus of this casserole is it takes less than an hour to prep and bake. After browning your beef, you just have to combine ingredients, assemble your layers, and bake.

STEP ONE: BROWN BEEF

The first step is to brown your lean ground beef over medium-high heat.

STEP TWO: MIX INGREDIENTS

After the ground beef has been browned, add taco seasoning, black beans, minced garlic, diced green chiles, and half a cup of enchilada sauce. Mix thoroughly and then preheat the oven to 350° F.

STEP THREE: ASSEMBLE FIRST LAYER

Before you start to assemble the casserole, make sure you spray your casserole dish with non-stick cooking spray. Then pour 1/3 cup of enchilada sauce into the bottom of the pan.

STEP FOUR: SECOND LAYER

Arrange a layer of corn tortillas to cover the bottom of the pan. To keep points lower it is important to use thin corn tortillas. I love Mission brand extra thin corn tortillas! If you use a thicker tortilla you will need to adjust the points!

STEP FIVE: THIRD LAYER

Add half of the mixture on top of the tortillas and spread it to cover the corn tortillas.

STEP SIX: REPEAT & BAKE

Repeat steps 3-5 and then add a layer of shredded cheese to the top. Now you are ready to bake for about 30 minutes!

WW Points for Beef Enchilada Casserole

This is a great recipe for Weight Watchers because the ingredients are low-calorie and with few ingredients, you know exactly what you’re fueling your body with.

On the current WeightWatchers Program (2023) it is 5 points per serving. Divide the casserole into 8 equal portions. One portion is a serving.

  1. Brown the ground beef in a large skillet over medium high heat.
  2. After beef is browned, add taco seasoning, black beans, minced garlic, diced green chilies, and ½ cup of enchilada sauce. Mix well and heat through.
  3. Preheat oven to 350F.
  4. Spray a 9 x 13 baking dish with non-stick cooking spray.
  5. Pour a 1/3 cup of the enchilada sauce into the bottom of the pan and spread around.
  6. Arrange 3½ corn tortillas across the bottom of the pan to cover it as best as possible.
  7. Spoon half of the prepared beef mixture on top of the tortilla layer.
  8. Spoon half of the remaining enchilada sauce on top of the beef mixture.
  9. Place the remaining 3½ corn tortillas on top of the layers.
  10. Repeat the beef mixite layer followed by the final layer of the enchilada sauce.
  11. Finally, sprinkle the shredded cheese over the top.
  12. Bake at 350F for about 30 minutes.
  13. Serve hot with salsa, sliced jalapenos and/or light sour cream.

    This looks really good. Do you know how many points it would be if you used ground turkey instead of beef. Also the corn tortillas are soft…should I cook them in oven to somewhat crisp before putting in casserole?

    I love this recipe. I used chicken breast because it is 0 points in 2024. I also added frozen corn for the same reason. I love these extra thin corn tortillas. I did not know about them, so thank you for that too! The best part about this recipe is the whole family loves it and no one complains about it being “diet food”.
