Is anyone in the mood for cupcakes? That is a hard mood to fight when you are watching calories. These Skinny Cherry Vanilla Cupcakes won't make you guilty for a little sweet indulgence because they are a little bit healthier then normal cupcakes. If you are doing Weight Watchers this will be a great Weight Watchers recipe when your sweet tooth rears its ugly head.

Skinny Cherry Vanilla Cupcakes
I love recipes with limited ingredients and this one is perfect with only 3 ingredients. I actually had what I needed in the pantry and had these whipped up in no time.
Ingredients Needed for Skinny Cherry Vanilla Cupcakes
- I box of Betty Crocker Super Moist Cherry Chip cake mix
- 1 cup of nonfat vanilla yogurt
- 1 cup of water
How to Make Skinny Cherry Vanilla Cupcakes
Preheat the oven to 350 degrees F. Add the dry cake mix, yogurt and water to a mixing bowl. Mix on medium until well blended.
Spray a regular-sized muffin pan with nonstick cooking spray. Spoon batter into muffin tin filling each cup about 1/2 to 2/3 full.
The cake mix box says that the mix should make 24 cupcakes. This was not the case for me. It only made 15 cupcakes for me and I didn't overfill the cups. I think when you are using this baking technique there isn't as much batter as when you make the cake mix traditionally.
You could also make mini muffins, but you will need to adjust the baking time accordingly.
Bake at 350 degrees for 15-20 minutes. I didn't find that these cupcakes browned very much on top, but they do puff up like a regular cupcake. They are also very moist!
Weight Watchers Points
If you are counting your points with Weight Watchers this is a great recipe. I used the recipe builder to make it and came out with 5 points per cupcake for the blue, green and purple myWW plans. This is based on making 15 cupcakes. I used the Fit and Active brand of yogurt from Aldi.

Obviously it is always a good idea to check points yourself based on what brands of food you buy. I am always surprised how different the points can be from the way one person figures it to another person.
