INGREDIENTS FOR WW CHICKEN SALAD

This version of skinny chicken salad has no fruit in it. I am not a big fan of mixing my sweets and savories. If you like fruit feel free to add some grapes or cranberries!

  • Cooked Chicken Breasts, diced small
  • Finely chopped Celery
  • Shredded Carrots
  • Non-Fat Greek Yogurt
  • Light Mayonnaise
  • Dijon mustard
  • Minced Dill Pickle
  • Lemon Juice
  • Salt and Pepper to taste
  • Loosely packed chopped Parsley

HOW TO MAKE SKINNY CHICKEN SALAD

I love easy recipes and this definitely qualifies. It is a great way to use leftover chicken breasts!

STEP ONE: MAKE DRESSING

In a large bowl combine the non-fat Greek yogurt, light mayonnaise, mustard, mince pickle, lemon juice, salt and pepper. Mix well till everything is combined.

STEP TWO: ADD MAIN INGREDIENTS

Now add the diced chicken breasts, celery and carrots.

Mix thoroughly till all the chick and the veggies are coated with the dressing.

Mix in the chopped parsley for freshness and beautiful color!

STEP THREE: CHILL

Let this skinny chicken salad chill in the fridge for 1 to 2 hours for the flavors to develop.

It is hard to wait, but it is worth it! The flavor is so much better if it has this time.

This chicken salad is good enough to be eaten as a stand-alone dish.

WEIGHT WATCHERS POINTS

If you are following the WW program this is a great recipe! It is low in points and will fill you up.

This makes around 4 cups of chicken salad. Serving size is 1/2 cup.

The points are: 3 points for green myWW plan and only 1 point for green and purple plans.

On the current WeightWatchers Program (2023) it is 1 point per serving. Please note the points don't reflect any bread–only the chicken salad.

Ingredients
  • lb. cooked Chicken Breasts diced small
  • 1 cup Celery finely chopped

  • ½ cup No-Fat Greek Yogurt
  • ½ cup Light Mayonnaise
  • 1 teaspoon Dijon mustard

Instructions

  2. Add the diced chicken breasts, celery and carrots.

  3. Mix thoroughly till all the chicken and the veggies are coated with the dressing.

  4. Mix in the chopped parsley for freshness.
  5. Let it chill in the fridge for 1 to 2 hours for the flavors to develop.
  6. Serve in lettuce cups or over whole wheat slice of bread or slider buns.
