WHAT IS DETOX SOUP?
Detox soup is not as complicated as it may sound. It is simply a soup that is packed with nutrient-dense vegetables.
We know that veggies can sometimes be hard on our digestive system, so this particular vegetable detox soup recipe purees the big chunks down so it is all easier to digest.
Similar to the once-popular “juice cleanse”, this is just a healthy way to get much-needed nutrients into our bodies and kind of reset our guts.
The problem with a juice cleanse is that fruit is much higher on the glycemic index and contains natural sugars. Opting for a vegetable-based detox soup eliminates those issues.
This soup is also filling and warm…and the leftovers are awesome!
WHY EAT DETOX SOUP AFTER THE HOLIDAYS?
Detox soup is great for after the holidays because the holidays tend to be a time when people overeat.
Our bodies are probably full of LOTS of sugar and other unhealthy foods. Detoxing with a veggie soup can be a good way to cleanse our bodies of all that sugar and reset with healthy veggies.
HOW TO MAKE VEGETABLE DETOX SOUP
This green detox soup is so simple to make. The main work involved is just chopping up those veggies. Blended soups are also great as a starter for holiday meals!!
STEP ONE: PREPARE VEGETABLES
This delicious soup has green beans, celery, and zucchini as the main ingredients.
Start off by snapping off the ends of the green beans.
Then coarsely chop up the celery and the zucchini. There is no need to peel the zucchini…because there are lots of nutrients in that peel!
STEP TWO: COMBINE IN POT
Now grab your big stockpot and add all these pretty green veggies.
Put in 1/2 a bunch of fresh herbs. You can pick your favorite…basil, parsley, dill, or cilantro. Or use what you have on hand! Basil is delicious in this particular recipe.
Pour the vegetable broth into the pot.
STEP THREE: COOK
Bring the soup to a boil and then reduce the heat to a simmer. Put a lid on your stockpot and allow this mixture to simmer for about 15 minutes or until those veggies are nice and tender.
STEP FOUR: BLEND
Once the soup is done cooking it is time to blend it so there are no big chunks.
The best method is to use an immersion blender. This is a great small kitchen appliance to have on hand.
Just use the immersion blender to blend the soup to a smoother consistency.
If you don't have an immersion blender then you can use a regular blender, BUT be careful. There are dangers when blending the hot soup. Never fill the blender more than 1/2 full and it is better to let the soup cool some before starting.
Now that the soup is ready to eat…you can add some heavy cream to the top or even butter if you want some extra flavor and fat. If not…just eat it as is with a sprinkle of extra herbs on top or even some crushed red pepper!

If you are on the WW plan, this is a great soup for you and maybe zero points depending on your personal plan.
On the current WeightWatchers Program (2023) it is ZERO points per serving. Serving size is 1 cup.
The recipe points do not include adding any cream or butter to the recipe! If you add those things be sure to count those points.

- ½ bunch fresh herbs such as basil,parsley, cilantro, or dill
- 1 lb green beans fresh
- 2 stalks celery
- 3 small zucchini
- 4 cups vegetable broth

Snap the ends off the green beans.

Coarsely chop the celery and zucchini. There is no need to peel the zucchini because the peel has lots of great nutrients and it will be blended.

Add the veggies and herbs to a large stockpot and pour the vegetable broth in.

Bring the soup to a boil and then reduce to a simmer. Cover the stockpot and allow the soup to simmer for 15 minutes or until the vegetables are tender.

Puree the soup in the pot using an immersion blender. If you don't have an immersion blender you can pour the soup into a regular blender in batches. Do not fill the regular blender more than 1/2 way because blending hot soup can be dangerous.

If desired, pour a little heavy cream of add a pat of butter to the bowl of soup for added fat and flavor. Add some fresh herbs to the bowl if desired or some crushed red pepper!
Serving size is 1 cup.
