WHY MAKE KETO MUG CAKE?
Mug cakes are the perfect sweet treat. If I make a whole cake I am doomed to eat WAY too much of the cake.
A mug cake keeps my portion LIMITED and in check.
The other great part of a mug cake is that it is quick to cook in the microwave. I know that making a cake in the microwave isn't the way to do it if you are a gourmet cook….but it works perfectly for me…a busy mom!
INGREDIENTS FOR KETO PEANUT BUTTER MUG CAKE
This low carb mug cake has pretty standard ingredients for keto desserts. I love that a lot of these ingredients last a LONG time.
- Coconut Flour
- Egg
- Peanut Butter
- Butter
- Sugar-Free Chocolate Chips
- Salt
- Unsweetened Almond Milk
- Baking Powder
- Stevia Extract Powder
HOW TO MAKE A KETO PEANUT BUTTER MUG CAKE
You don't need to get your mixer out for this recipe. All you need is a whisk and a small bowl. 🙂
STEP ONE: MAKE BATTER
Add all the ingredients to a small bowl and use a whisk to combine the ingredients well.
STEP TWO: ADD TO MUG
Take a small mug and pour the batter into the mug. This cake will rise so you need to make sure there is about 1.5 inches of room at the top of the mug.
STEP THREE: COOK
Place the mug in the microwave and cook for 3 minutes. Check the cake after the 3 minutes.
If the cake is still wet go ahead and cook for 30 more seconds. You want the cake to be soft but not wet. Overcooking the cake will make it very dry!!
Remember that microwave cooking times will vary greatly depending on the wattage. It is always best to undercook and add a little time then to overcook and have it be ruined.
Let the cake cool a little and then enjoy! This tastes great with whipped heavy cream or sugar-free keto-friendly ice cream.
KETO MUG CAKE TIPS
If you have been eating a keto diet for very long you know there are always a lot of tips and alternatives for different ingredients.
Here are a few tips for this keto peanut butter mug cake recipe:
- If you don't want to use peanut butter it is fine to use another nut butter as long as it is free from other ingredients.
- It is possible to substitute another sweetener for the Stevia extract powder if you prefer. You may need to adjust the amounts based on the kind of sweetener you choose.
- This mug cake is actually 2 servings. You can pour it into 2 small ramekins instead of one mug if you want to separate the servings.
KETO PEANUT BUTTER MUG CAKE RECIPE

Keto Peanut Butter Mug Cake is delicious and quick to make in the microwave.
- 2 tbsp coconut flour
- 1 egg
- 1 tbsp peanut butter
- 2 tbsp sugar-free chocolate chips
- 1 tbsp butter melted
- Pinch of salt
- ¼ cup unsweetened almond milk
- ½ tsp baking powder
- ½ tsp stevia extract powder

In a small mixing bowl add all the ingredients and whisk until well combined.

Add the batter to your favorite mug (or mugs) leaving at least 1.5 inches of space from the batter to the top of the mug, to allow the mug cake to rise and avoid spills.

Microwave for 3 minutes, check the cake, it should be soft but not wet. If it is wet microwave for another 30 seconds. (it is very important to avoid overcooking since it may become dry).

Let it get warm for 30 seconds and enjoy.
*Nut butter may be replaced for another nut butter as long as it doesn’t have any added ingredients.
*Stevia may also be replaced for your preferred artificial sweetener.
*Cooking time in the microwave are variable depending on their watts, it is better to undercook the cake and add more time than to overcook it.
